Sally Jackson's Famous Blue Chocolate Chip Cookies

Soft and chewy chocolate chip cookies perfect for any Percy Jackson fan or any cookie lover.

Servings: 30 Cookies

Ingredients
  

  • 1 Cup Butter (half-melted)
  • ¾ Cup Brown Sugar
  • Cup White Sugar
  • 2 tsp Vanilla Extract
  • 1 tsp Apple-Cider Vinegar
  • 1 Egg
  • 2 Cups Flour
  • 1 tsp Baking Soda
  • ½ tsp Salt
  • 1 bag Chocolate Chips
  • Blue Food Coloring

Method
 

  1. Pre-heat oven to 350℉ and prepare and line a baking sheet (to reduce my waste usage, instead of parchment paper, I prefer to use a silicon baking mat, which you can find cheap on Amazon)
  2. Beat butter and sugars together in a bowl

  3. Add and beat in vanilla, apple-cider vinegar, and egg to the mixture one at a time
  4. At this point, add in blue food coloring dropwise until the dough reaches the desired color

  5. In a separate bowl, whisk together flour, baking soda, and salt
  6. Beat together the dry ingredients with the blue dough, adding the dry ingredients slowly, in thirds (this helps avoid the dramatic poof of flour)
  7. Once combined, fold in the chocolate chips, leaving a handful off to the side for later

  8. Using two spoons, scoop the dough into small clumps and bake for 8-10 minutes (Note: The cookies will not look completely done, appearing very soft and fragile. They will set more firmly as they cool)

  9. While the cookies cool, place individual chocolate chips on top of each cookie as desired and sprinkle cookies with additional sea salt to taste

  10. Allow cookies to further cool for at least 10 minutes before transferring
